TUNA CARPACCIO
- Hold the tuna steady on the board. Using a
salmon knife, cut into the tuna at an angle and making
individual cuts from top to bottom, cut waferthin
slices.
TUNA TARTARE
- Slice a thin 5mm / 0.20inch piece from the
tuna fillet and cut this into strips. Then, turn these
90° and dice. Cut criss cross for as long as is
necessary for the fish to be fine enough for tartare.
Chop the fish, gather the pieces together and chop
again in alternating directions until the pieces are
about 5mm / 0.20inch by 5mm / 0.20inch.
