Step by step instructions

  1. Pull the head out of the body and remove the innards and the pen.
  2. Using a paring knife, remove the skin from the body.
  3. Now, cut the body in half and scrape out the remaining innards with a knife.
  4. Finally, cut off the tentacles from the head and remove the beak inside.

To flash fry: To stop the squid from wrinkling up when being fried, score in an even diamond pattern a couple of millimetres deep into the flesh. The squid can also be stuffed, breaded or kept raw and made into sushi. Pound the flesh of larger animals before cooking so that it cooks quicker.
