Step by step instructions
CHANTERELLE
- Using a knife, scrape the skin of the chanterelle
stalks from top to bottom.
- Then, cut off the earthy end of the stalk.
OYSTER MUSHROOM
- Cut the stalk off the mushroom.
- Hold the cap light side down on the board with
the claw grip and cut into 1cm / 0.39inch strips.
- Turn the mushroom strips 90° and finely dice.
BUTTON MUSHROOM
- Snap off the mushroom stalk.
- Using a paring knife, peel the mushroom skin
from the opening towards the top of the cap.
- Place the mushroom cap spores down on the
board and cut into strips of about 3mm / 0.12inch.
