Knives with plastic handles are dishwasher safe. However, the dishwasher cleans much more aggressively than handwashing. Highly
concentrated cleaning agents, the length of time the knife is subject to hot steam and even certain food waste can lead to a marked or
even corroded blade. Furthermore, there is always the danger that blades knock together or against other objects in the dishwasher and
get damaged. If the wrong amount of cleaning agent is put in, a blade can quickly become pitted or rusty.
Therefore, we recommend cleaning by hand using a soft cloth and a mildly alkaline cleaning agent. Carefully wipe the knife dry after
cleaning to prevent staining on the blade. Should the blade become stained, this can be removed with standard steel-cleaning products.
Acids, such as those found in lemons or onions are extremely aggressive and cause the surface of the blade to oxidise. Therefore, a knife
should be washed immediately after it has been used to cut acidic foodstuff.
To protect the wooden handles on your knives so that they can be used for a long time, they need to be treated now and again with a
natural oil such as olive oil.
Looking after your knives guarantees them a long life, and your enjoyment in cooking. Knives are ground thinly to the edge and may only
be used for cutting, not rough work such as cleaving or hitting.
Quality knives need to be cared for; and regularly resharpened. Through wear and tear when cutting food or coming into contact with
the chopping board, even the best knife loses some of its sharpness over time. A well-equipped kitchen is therefore never without a
sharpening steel or other knife sharpener, because sharp knives make cooking fun. Sharpening affects both the ability of the knife
to keep its edge and indeed to cut, which in turn affect how economical a knife is and the quality of your kitchen work. You can test
whether a knife is still sharp enough on a ripe tomato. If the knife can cut into the skin of the tomato without too much force being
applied, it is still sharp enough.
