Step by step instructions

  1. Place the artichoke on the cutting board and press the stalk down towards the board.
  2. Turn the vegetable and press down the stalk again, snapping it so that it comes out with the hairs attached.
  3. Cut off the base.
  4. Fold down the outer leaves and cut off the flowers.
  5. Using a Parisian scoop, scrape out the stringy grass from the artichoke.
  6. Then, place the artichoke upside down on the board and cut off the leaves.
  7. Remove any remaining green from the artichoke.
  8. Now, cut the vegetable into 1cm / 0.39inch-thick wedges, ready to use!
