Step by step instructions
- Place the artichoke on the cutting board and press the
stalk down towards the board.
- Turn the vegetable and press down the stalk again, snapping
it so that it comes out with the hairs attached.
- Cut off the base.
- Fold down the outer leaves and cut off the flowers.
- Using a Parisian scoop, scrape out the stringy grass from
the artichoke.
- Then, place the artichoke upside down on the board and
cut off the leaves.
- Remove any remaining green from the artichoke.
- Now, cut the vegetable into 1cm / 0.39inch-thick wedges,
ready to use!
